Believe me, I wish it was otherwise, but to hold out hope for some sign of a spine from Bush et al., is nuts.

Isn't that also called a "Flank Steak?" A long stranded, high connective tissue piece of meat drawn from the. . . . chest? I think? The thin layer on the side of the ribs I think. It's like a "Skirt Steak" which I think is the muscular tissue that drives the diaphram.
If thats what you mean, then yeah, I love cubing skirts, and flat-irons, don't marinate them much, I prefer them for fajita's, or salad accent, or sometimes for a breaded swiss (though alton brown thinks the round is best, I'm not a french trained chef, so I will use what I want, thank you very much alton, though I love your show)
