110 I believe this is the roast pork shoulder recipe from Cooks Illustrated. It involves scoring the outside of the fat cap before coating the whole thing in a mixture of kosher salt and light brown sugar and wrapping it up overnight before setting it in a v-rack in a roasting pan over a quart of water at ~225 degrees for 3-4 hours, basting occasionally and topping off the water. Or does it just look exactly the same as that one?

Church's, Chick-fil-a, Kenny Rogers, Popeyes...man do I miss Chick-fil-a. Couldn't get any good Italian food down there at all though, not even close. I spent a fortune having good prosciutto, gabbagool, bread and the like shipped down there to me.

153 A cross hatched pork but smoked slow over hickory. Cross hatched to allow the fat to be more efficient at basting as it smokes. From the looks I would say about a 9 pounder, smoked using apple juice or some other fruit juice under it to add moisture but not steam. Not Memphis style, perhaps Carolina or East Coast. With the accumulation of bark on the outside i would think that this was about a 10 hour smoke at 212 degrees (more or less). So grade me if you can.......
